This is one of my favourite Danish recipes. It’s like chicken curried meatballs and it’s delicious. All kids in Denmark love this food.
Once when I had this, I was allergic to something in the ingredients. I don’t know what it was, but it gave me spots on my face! But don’t let that put you off – it is worth a try. And anyway, that only happened because it was bought in a shop. This time it is homemade and I am sure it will be okay.
To make it, you will need:
2 onions
400g minced chicken
50ml breadcrumbs
1 egg
2 tablespoons olive oil
1 tablespoon curry powder
1 tablespoon plain flour
100ml water
1 tin of coconut milk
3 tablespoons mango chutney
And some boiled rice to eat it with.
Peel the onions and chop them finely. Keep half of them back for later. Mix the other half with the minced chicken, breadcrumbs, egg and a teaspoon of salt.
When they are mixed, make some golf ball sized balls with the mixture. My mixture made 12 balls. Put them on a plate for later.
Fry the rest of the onion until lightly browned.
Add the curry powder and then the flour, and keep frying for about a minute.
Mix the coconut milk, water and mango chutney together, and then add the mixture to the pan.
Add the chicken balls to the sauce, and let it simmer for about 15 minutes. If the sauce is too thick, you can add a little more water.
I like to eat this with rice. It reminds me a bit of the frikadeller recipe, but it tastes a lot different. I would love to hear what you think about it.
